Buonasera is a sharp, classic West Coast-style American IPA that showcases a vibrant hop collaboration between Funky Fluid and MC77. This expression is defined by a high-intensity aromatic profile, led by the citrus and tropical notes of Citra and Mosaic, layered with the distinct floral and grapefruit zest of Amarillo. A clean, neutral fermentation allows the resinous pine and stone fruit character to dominate the palate. The experience is underpinned by a lean, bready malt backbone that provides structure without sweetness, leading to a crisp, aggressively bitter finish that highlights the dry-hopped precision of this Italian-inspired collaboration.
Appearance. Medium gold to light amber. Brilliant clarity with a tall, persistent off-white head that leaves dense, sticky lacing.
Aroma. High intensity hop-forward aroma featuring dominant notes of grapefruit, blueberry, and mango from the Citra and Mosaic. Underlying Amarillo contributions provide a floral, orange-blossom sweetness and spicy resin. Malt is low and neutral, reminiscent of toasted white bread, with a very clean fermentation profile.
Taste. Initial punch of citrus rind and pine sap. Hop flavors are very high, echoing the tropical and berry notes of the aroma. Bitterness is firm and assertive, cutting through the light grainy malt sweetness immediately. Finishes very dry and clean with a lingering resinous and citrus-peel aftertaste. No harshness or astringency.
Mouthfeel. Medium-light body with a smooth, crisp texture. Carbonation is medium-high, providing a lively prickle on the tongue. Alcohol warmth is very subtle and well-integrated.
