Funky Fluid Birdie is an assertive Double IPA that leans into a sophisticated, vinous profile through a deliberate collaboration with Atelier der Braukunste. The use of Nelson Sauvin and Hallertauer Blanc hops creates a prominent bouquet of white grape, gooseberry, and elderflower, amplified by enzymatic treatment for a distinctively wine-like character. Despite its 9% ABV and high original gravity, it presents a leaner, drier body than traditional Triple New England IPAs. This profile emphasizes a crisp, clean finish where the hop-derived bitterness and tropical fruit notes shine against a restrained, neutral malt backbone, offering an elegant yet potent drinking experience.
Appearance. Deep gold with light orange highlights (8 SRM). Moderate, persistent off-white head with fine lacing. Generally clear with a very slight, luminous haze.
Aroma. High intensity hop-forward aroma dominated by white wine grapes, crushed gooseberries, and elderflower. A subtle background of passion fruit and zesty lime. Neutral, cracker-like malt provides a quiet foundation with minimal alcohol presence.
Taste. Immediate burst of white wine and gooseberry flavors followed by refined floral and lemongrass notes. Bitterness is moderately high and firm but well-integrated. The finish is remarkably dry for the gravity, leaving a lingering, clean hop character and light fruitiness without any malt heaviness.
Mouthfeel. Medium-bodied with a crisp, effervescent mouthfeel. Moderate-high carbonation. A gentle, well-integrated alcohol warmth is present but smooth. Texture is clean and non-astringent.
