Funky Fluid

This Wild Specialty Beer presents an inventive fusion of a Tart IPA and fresh rhubarb. The sensory experience is led by a bright, lactic acidity that highlights the vegetal tartness and subtle strawberry-like nuances of the rhubarb. A firm hop presence provides citrus and tropical fruit notes typical of a modern IPA, while the wild fermentation adds a layer of rustic complexity and a clean, puckering snap. The malt provides a light, cracker-like foundation, allowing the interplay between hop oils and tangy fruit to shine. It finishes exceptionally dry, leaving a lingering impression of citrus zest and earthy rhubarb.

Appearance. Deep gold to pale amber (6-9 SRM) with a distinct pinkish-orange tint from the rhubarb. Pours with a moderate, off-white to pale pink head that fades relatively quickly due to acidity. Slight to moderate haze is present.

Aroma. High intensity with a sharp, tangy lactic punch and fresh, earthy rhubarb. Hop aromatics are prominent, featuring grapefruit, lime, and passionfruit. A subtle bready malt sweetness sits in the background, complemented by a mild wild fermentation character reminiscent of lemon zest and light hay.

Taste. Assertive lactic sourness immediately hits the palate, followed by the distinctive, astringent tartness of rhubarb. Hop flavors of resinous pine and tropical fruit are balanced by a medium-low bitterness. The malt profile is lean and cracker-like. The finish is bone-dry and acidic, with a lingering citrusy and herbal aftertaste.

Mouthfeel. Medium-light body with high carbonation that creates a prickly, refreshing sensation. There is a slight, pleasant astringency from the rhubarb. Alcohol warmth is light and well-integrated, contributing to a crisp and clean mouthfeel.
