This collaboration between Full Circle Brew Co and Varvar Brew presents a distinctive Ukrainian Golden Ale that reimagines the Blonde Ale style with increased depth. The use of a specialized yeast strain leaves a significant presence of residual sugar, providing a soft, plush malt backbone reminiscent of bready wheat and honey. Ahtanum hops contribute a delicate floral and citrus character that layers over the sweetness. Despite the higher gravity, a gentle bitterness ensures drinkability, balancing the rich body. The result is a harmonious, approachable pint that showcases a unique textural softness and a clean, lingering malt-forward finish.
Appearance. Deep gold color (6 SRM). Brilliant clarity. Moderate white head with good retention and light lacing.
Aroma. Moderate malty aroma with notes of sweet bread, honey, and light grain. Hop character is low to moderate, displaying floral, earthy, and faint grapefruit citrus from the Ahtanum hops. Clean fermentation with very low fruity esters.
Taste. Initial impression of soft, honeyed maltiness. Malt flavors of bread and light biscuit dominate the mid-palate. Hop flavor is moderate, leaning toward floral and spicy citrus. Bitterness is medium-low, enough to provide balance without being aggressive. The finish is slightly sweet with a lingering bready character.
