Ta-Da is a vibrant Wild Specialty Beer that showcases a bold interplay between jammy fruit and bright acidity. Intense additions of Blueberry and Lemon drive the profile, offering a deep berry richness balanced by sharp citrus zest. The inclusion of Vanilla softens the acidic edges, creating a creamy, dessert-like undercurrent that rounds out the robust 7.5% ABV. While the base provides a sturdy, bready foundation, the focus remains on the expressive fruit character and a clean, lactic sourness. Appearance. Opaque and deep purple to magenta in color. Pours with a thick, pink-tinted head that shows moderate retention and leaves light lacing on the glass.

Aroma. High intensity; prominent aromas of ripe blueberry jam and freshly zested lemon dominate the nose. A smooth, marshmallow-like vanilla sweetness provides a bridge between the fruits, masking most malt character. Very low clean lactic tartness; no hop aroma.

Taste. Initial impression is a burst of tart blueberry followed quickly by a sharp, refreshing lemon punch. Malt flavor is minimal, providing just enough cracker-like support for the fruit. Vanilla adds a perceived sweetness that balances the firm, clean acidity without being cloying. Bitterness is nearly absent. The finish is crisp and tart with lingering notes of berry skins and creamy vanilla.
