Dream #8 marks a refined shift from Fuerst Wiacek’s typical high-gravity stouts, delivering a sessionable Irish Stout that prioritizes roasted complexity. The sensory profile is defined by an assertive coffee-like aroma and flavors of unsweetened dark chocolate. Despite the modest ABV, the palate is robust, featuring the characteristic dryness of roasted barley and a firm, clean bitterness that balances a hint of malty sweetness. This experimentation yields a beer with a sophisticated, lean structure and a lingering roasted finish, successfully capturing the essence of the style while maintaining the brewery’s signature modern polish and drinkability.

Appearance. Jet black with deep garnet highlights; opaque. Features a thick, persistent, creamy tan-colored head with excellent lacing.

Aroma. Moderate to high intensity. Dominated by coffee-like roasted grain and dark chocolate. Subtle secondary notes of cocoa and a very low, earthy hop presence. Fermentation is clean with only faint fruity esters.

Taste. Initial roasted grain impact with a medium-high bitterness. Flavors of unsweetened chocolate and cold-brew coffee dominate the palate. The balance is firmly on the dry side, though a hint of caramel malt sweetness provides background support. Finishes dry and clean with a lingering roasted aftertaste.

Mouthfeel. Medium body with a remarkably smooth and slightly creamy character. Moderate carbonation. Very low alcohol warmth, consistent with its sessionable design. Exhibits a light, pleasant roasted astringency without harshness.
