This blend of wild-harvested apples, mellow pears, and rare Swedish quince offers a vivid sensory experience. The aroma is exceptionally perfumed, leading with the quince's signature notes of honeyed citrus and rose petals, underpinned by a rustic, earthy apple character. On the palate, the cider strikes a balance between the pear's soft sweetness and a firm, refreshing acidity. Appearance. Pale straw to light gold (SRM 2–4). Brilliant clarity with a vigorous, sparkling effervescence and a fine, rapidly dissipating mousse.
Aroma. High intensity floral and honeyed perfume from the quince, reminiscent of roses and citrus zest. Moderate notes of ripe yellow apple and a soft, delicate pear sweetness are supported by a faint, rustic earthiness from the untreated garden fruit.
Taste. Initial impression is bright and acidic. Vibrant quince flavors provide a tart, floral edge, while pears offer a rounded, subtle sweetness in the mid-palate.
