This decadent Imperial Stout presents a masterful layering of complex barrel influences atop a robust, midnight-black base. Intense aromas of bittersweet chocolate and espresso are immediately enriched by the distinctive, sugary depth of Maple barrels. As the beer breathes, nuances of dark, vinous grape from the Porto casks emerge alongside the bright, distilled orchard fruit character of Calvados. The palate is viscous and chewy, delivering a harmonious blend of roasted malts, rich syrup, and warming spirituous notes. It concludes with a long, velvety finish where the charred oak and lingering dark fruit provide a sophisticated, multi-dimensional sensory experience.
Appearance. Jet black and completely opaque (40+ SRM). Pours with a thick, deep tan head that shows moderate retention. Visible viscosity and legs cling to the glass upon swirling, indicating high gravity.
Aroma. High intensity with a complex bouquet of dark chocolate and roasted coffee. Pronounced barrel-derived notes of maple syrup, red wine, and subtle apple brandy. Underlying dark fruit esters of raisin and fig are balanced by a gentle, warming alcohol presence with no detectable hop aroma.
Taste. Bold initial impression of sweet roasted grain and cocoa. The mid-palate reveals layers of maple and rich, jammy fruit from the Porto aging, followed by a hint of Calvados apple spice.
