Daddy Cool is an evocative Belgian Tripel that balances traditional monastic complexity with a contemporary twist of vanilla. The sensory experience is led by a bouquet of peppery phenols and citrusy esters characteristic of its Belgian yeast, seamlessly integrated with the aromatic warmth of vanilla beans. The Pilsner malt provides a subtle, honey-like base that bridges the gap between the spicy hop notes and the creamy vanilla character. Despite its robust 8.5% ABV, it maintains a deceptive drinkability, offering a dry yet rounded profile where the vanilla adds a lush layer without compromising the style's signature effervescence and firm bitterness.

Appearance. Deep yellow to pale amber (5-7 SRM). Features a long-lasting, creamy, rocky white head that leaves persistent Belgian lace. Excellent clarity with high effervescence.

Aroma. High intensity with a complex bouquet of peppery and clove-like phenols. Moderate fruity esters reminiscent of orange peel and lemon. The distinct aroma of sweet vanilla beans is prominent but well-integrated. Low spicy hop notes and a soft, honey-like Pilsner malt character provide a solid foundation. Alcohol is soft and spicy rather than solventy.

Taste. The initial impression is spicy and slightly sweet, followed by soft grainy-sweet malt flavors. Moderate peppery phenols and light citrus esters are complemented by a smooth vanilla finish. Hop bitterness is firm and well-balanced, providing structure against the high ABV. The beer finishes very dry and clean with a lingering spicy-fruity yeast character and a touch of vanilla sweetness in the aftertaste.

Mouthfeel. Medium-light to medium body, feeling lighter than the 8.5% ABV would suggest. High carbonation leads to a lively, effervescent mouthfeel. Alcohol warmth is noticeable but smooth and well-integrated. Low creaminess from the vanilla addition, with no astringency.
