Freigeist Bierkultur Schampus Weiße 2017

This elegant, straw-colored Berliner Weisse offers an incredibly complex, sparkling sensory experience shaped by its unique four-stage fermentation. A vibrant effervescence drives aromas of tart lemon zest, green apple, and white wine, underscored by a rustic, wild funk of dusty hay and leather from the Schneeeule Brettanomyces culture. On the palate, a bracingly clean lactic acidity is balanced by a delicate, doughy wheat malt backbone and a faint whisper of dry oak from six months in wooden barrels. It finishes bone-dry, crisp, and remarkably clean, with a lingering, champagne-like brightness and floral sophistication.
Appearance. Pale straw in color (2-3 SRM) with brilliant clarity and highly active, champagne-like effervescence. It pours with a large, billowy, stark-white head that dissipates fairly quickly, leaving minimal lacing.
Aroma. Moderately high to high sharpness with a clean lactic sourness. Prominent yet elegant wild character from the Brettanomyces, showcasing notes of dry hay, horse blanket, and a hint of mineral dust. Fruity esters of lemon peel, tart pear, and green apple are layered over a very light, crackery wheat malt profile, with subtle dry wood notes in the background. No hop aroma.
Taste. Bracing, clean lactic tartness dominates the initial taste, supported by a subtle, doughy, and grainy wheat malt flavor. Complex Brettanomyces flavors of wildflower, wet straw, and white grape skins emerge mid-palate, complemented by a faint woody dryness from the barrel. No hop flavor or bitterness is present. The finish is extremely dry, crisp, and clean, with a lingering lemon-acid bite and a touch of rustic funk.
Mouthfeel. Light-bodied but far from thin, with an extremely high, spritzy, and effervescent carbonation that tingles the tongue. Crisp, sharp acidity provides a refreshing, mouth-watering sensation. Very light alcohol warmth is dry and exceptionally well-integrated, with no astringency.

Freigeist Bierkultur, Bayerischer Bahnhof Leipzig & Schneeeule Berlin The beer then went through four different stages of fermentation. Initially the beer was brewed as an 8° Plato low alcohol wheat beer, and fermented with Lactobacillus bacteria. The second fermentation took place with a normal ale yeast. Then a special Schneeeule Brettanomyces yeast culture was pitched into the beer, and it was stored for 6 months in wooden barrels. The contents of the barrels were then racked into champagne bottles and stored in a Sekt cellar for three months whilst it fermented for the fourth time with a Champagne yeast.
