Evoking the historical brewing spirit of the Sauerland region, the sensory profile opens with aromatic camp-fire and smoked malt notes that meld into a bouquet of tropical stone fruit and aged hay. The palate is defined by its extreme attenuation, offering a bone-dry experience where earthy funk and a whisper of citrus acidity dance against a lingering, savory smoke backdrop. Appearance. Deep gold to pale amber with a slight, natural haze. Pours with a moderate white head that shows fair retention and leaves light lacing on the glass.
Aroma. Moderate intensity smoke, ranging from woodsy to slightly savory. Complemented by Brett-driven notes of wet hay, leather, and barnyard funk, alongside subtle esters of overripe pineapple and lemon zest. Low bready malt remains in the background.
Taste. Initial savory smoke flavors transition quickly into a dry, rustic malt character. Brettanomyces provides a complex layer of earthy funk and bright citrus fruitiness. Bitterness is low, allowing a light, non-lactic tartness to provide structure. Finishes very dry with a lingering echo of campfire smoke.
