This sophisticated Berliner Weisse offers a complex sensory journey, shaped by two and a half years of maturation in wooden barrels. The characteristic sharp lactic sourness of the style is elegantly softened by delicate floral notes of Elderflower, which provide a nuanced, wildflower perfume. On the palate, the Brettanomyces influence manifests as sophisticated notes of sun-dried hay and aged cider rather than aggressive funk, perfectly complementing the crisp, bready wheat base. Highly effervescent and exceptionally dry, it finishes with a lingering, bright acidity and a subtle woody depth that reflects its extended cellar time and meticulous final bottle fermentation and disgorgement.
Appearance. Straw to pale gold (2-3 SRM). Brilliant clarity from extended aging and disgorging, with a large, dense, white head that displays moderate retention. Highly effervescent.
Aroma. Moderate to high sharply sour character. Prominent floral Elderflower notes dominate, supported by tart apple and lemon esters. Secondary nuances of hay, wildflower, and a touch of honey from the Brettanomyces and wood aging are present. No hop aroma.
Taste. Clean, sharp lactic sourness is the primary impression, followed by a delicate floral Elderflower flavor. A light doughy and grainy wheat malt backbone provides support. The finish is bone-dry with a lingering tartness and faint woody tannins. Fruit notes of tart peach and citrus are present, while hop bitterness remains undetectable. No vinegary notes.
Mouthfeel. Light body with high carbonation that creates a prickly, refreshing sensation. Crisp acidity on the palate. Very low alcohol warmth despite the slightly elevated gravity for the style.
