This Straight Sour Beer represents a masterclass in complexity, merging the depth of a dark decoction mash with the wild soul of coolship fermentation. Having matured for over two and a half years in wooden barrels, the sensory profile is defined by a sharp, clean lactic acidity that pierces through a rich, mahogany malt base. Aromas of dark bread crust and toasted grains mingle with tart cherry and lemon esters. On the palate, the assertive acidity is balanced by a sophisticated malt depth and subtle oak tannins, concluding in a crisp, dry finish where the 6.8% ABV provides a well-integrated, gentle warmth.
Appearance. Deep mahogany to dark chestnut in color (22–28 SRM). Pours with a low, off-white head that exhibits poor retention, leaving minimal lacing. Appearance is generally clear but may show a slight haze from the long-term barrel maturation.
Aroma. High intensity sharp lactic sourness dominates the nose. A robust malt character follows, offering notes of toasted bread crust and dark grains derived from the decoction process. Moderate fruity esters of tart apple and plum are present, alongside a subtle, dry oak woodiness from extended aging. No hop aroma is perceptible.
Taste. The initial impression is one of intense, clean lactic sourness. This acidity is immediately supported by a complex malt profile featuring flavors of bready crusts and toasted grain. Hop bitterness is undetectable, allowing the tartness to drive the balance. Pale fruit notes of lemon and green apple are prominent, while the finish is dry and lingering with a crisp, acidic snap. A faint, earthy barrel character adds nuance to the aftertaste.
Mouthfeel. Medium-light body with moderate to high carbonation. A noticeable but smooth alcohol warmth is present, reflecting the 6.8% ABV. The acidity is crisp and mouth-watering, accompanied by a very light, drying tannin from the wood barrels.
