This imperial-strength Gose showcases a complex, wild evolution from two years of oak aging and coolship fermentation. Aromas of vinous white grape juice, resinous rosemary, and zesty ginger mingle with a bright lactic acidity and subtle woody vanillin. On the palate, a delicate salinity anchors a bold wave of tart citrusy orange peel, spicy ginger warmth, and rustic, earthy oak. Dry and wonderfully warming at 8.7% ABV, this historic style is elevated into a sophisticated, vinous elixir, offering an intriguing balance of herbal, fruity, and funky wild notes.
Appearance. Deep golden to amber-yellow color with a moderate, hazy opacity. Pours with a moderate, fine-bubbled off-white head that recedes to a persistent collar, leaving light lacing.
Aroma. High intensity. Prominent vinous esters of green grape and white wine, coupled with a distinct herbal punch of fresh rosemary and sharp ginger. Bright citrusy orange peel and lactic tartness are balanced by complex, earthy oak notes, subtle vanilla, and a hint of wild, funky barnyard character from the coolship fermentation. Malt presence is low, masked by the expressive adjuncts.
Taste. Initial impression is a vibrant, clean lactic sourness layered with juicy grape fruitiness and a touch of warming ginger spice. Mildly medicinal and piney rosemary flavors emerge mid-palate, complemented by sweet orange peel oil. Very low hop bitterness, balanced instead by a soft, briny salinity and firm oak tannins. Finishes bone-dry and remarkably complex, with lingering tartness, wood character, and herbal spice.
Mouthfeel. Medium body, rounded and slightly slick from the grape juice and salt, but thinned out by high acidity. Moderate to high carbonation provides a lively, effervescent sparkle. A gentle, comforting alcohol warmth is present, alongside a mild, pleasant wood-derived astringency.
