This Double West Coast IPA delivers an intense, multi-layered hop experience driven by an assertive triple dry-hop addition. Simcoe provides a foundation of resinous pine and woodsy spice, while Rakau introduces ripe stone fruit notes of apricot and pear. The addition of Nelson Sauvin adds a distinctive crushed white grape and gooseberry complexity, cutting through the clean, neutral malt base. Despite its 8.8% ABV, the beer remains remarkably lean and dry, emphasizing a sharp, clean bitterness. It is a quintessential Double IPA, balancing high-impact aromatics with a refreshing, assertive finish that invites the next sip.
Appearance. Deep gold to light copper (SRM 7–10) with brilliant clarity. Pours with a moderate-sized, persistent white head that leaves significant lacing on the glass.
Aroma. Intense hop aroma featuring pungent resin, pine, and grapefruit from Simcoe, complemented by the stone fruit character of Rakau and the signature white grape notes of Nelson Sauvin. Malt is low and neutral, providing a clean, grainy backdrop. Fermentation is clean with very low fruity esters.
Taste. Strong and complex hop flavors mirror the aroma, leading with resinous pine and tropical fruit. Bitterness is high but clean and never harsh. The malt character is supportive and unobtrusive, lacking significant caramel or toast. The finish is notably dry and crisp, with a long, lingering hoppy and bitter aftertaste.
Mouthfeel. Medium body with a smooth, slightly oily texture from the heavy hopping. Carbonation is medium-high. A well-integrated, smooth alcohol warmth is present but not solventy or hot.
