Thieves is an expressive and intensely aromatic Double IPA, showcasing a collaborative Triple Dry Hopped profile that balances power with high drinkability. The sensory experience is led by a vibrant bouquet of Citra and Riwaka, yielding notes of pink grapefruit, lime zest, and tropical passionfruit. Nelson Sauvin adds a sophisticated layer of crushed white wine grapes and gooseberry, while the addition of raw honey provides a floral nuance and ensures a bone-dry, crisp finish. This ale manages its significant strength with a clean malt backbone, allowing the complex Southern Hemisphere and American hop characters to remain the focal point from the first sip to the resinous finish.

Appearance. Deep gold to light orange (8 SRM); moderate-sized, persistent white head with excellent lacing; hazy to opaque, consistent with modern triple dry-hopped styles.

Aroma. High intensity; dominant tropical fruit (guava, passionfruit), citrus (grapefruit, lime), and white wine grape esters. Very low, clean, grainy malt in the background with a subtle floral honey note. Alcohol is present but well-integrated and smooth.

Taste. Initial impression of intense tropical and citrus fruit followed by a firm, moderately high bitterness. Malt flavor is low and neutral, providing a soft platform for Citra-driven grapefruit and Riwaka-led diesel and lime. The finish is very dry and clean with a lingering, pleasant bitterness and a touch of Nelson-derived vinous character.

Mouthfeel. Medium body with a smooth, soft texture; medium-high carbonation. A noticeable but restrained alcohol warmth is present without being hot or solventy. Very low astringency despite the heavy dry-hopping.
