Flying Monkey reimagines the classic Witbier with a vibrant, modern citrus profile. The backbone of Steffi Pilsner malt and wheat provides a soft, bready foundation that supports an explosion of Bergamot and lime. Hallertauer Mittelfrüh and Select hops offer a subtle herbal spice, while the addition of Amarillo and Callista introduces bright layers of stone fruit and berry. This hazy, pale yellow ale offers an aromatic bouquet of zesty peel and floral esters. It finishes refreshingly crisp and dry, balancing the gentle honey-like malt sweetness with a lively, effervescent carbonation and a clean, citrus-forward linger.

Appearance. Very pale straw with a milky, whitish-yellow haze from suspended yeast and starch. Features a dense, white, moussy head with excellent retention and delicate lacing.

Aroma. High intensity of zesty Bergamot and lime peel, complemented by moderate bready-grainy wheat notes. Subtle spicy-herbal hop character from noble varieties mingles with light apricot and floral esters derived from modern hops and a clean Belgian yeast strain.

Taste. Initial impression of crisp, bready Steffi malt followed by a wash of bright citrus and lime zest. Very low bitterness is well-integrated, supporting the herbal and fruity components.
