NEIPA - New England IPA 10.2 º
Survive Until 2025 is a formidable Double IPA that presents a masterclass in hop saturation. An intense aromatic bouquet of tropical passionfruit and peach stems from the heavy use of Galaxy and Citra BBC, while El Dorado contributes distinct notes of watermelon and stone fruit. At 10.2% ABV, the beer maintains a surprisingly lean profile, with neutral grainy malts providing just enough structure to support the high bitterness. The palate is dominated by resinous citrus and tropical zest, finishing quite dry with a clean, lingering bitterness. A smooth, well-integrated alcohol warmth rounds out this powerful, fruit-forward expression of the style.
Appearance. Deep gold to light orange (8-10 SRM). Large, persistent off-white head with excellent lacing. Slight haze is present, consistent with modern heavy dry-hopping techniques.
Aroma. High intensity. Prominent tropical fruit (passionfruit, pineapple), citrus (grapefruit), and stone fruit (peach, melon). Background of neutral, grainy malt. Clean fermentation profile with a hint of smooth alcohol presence.
Taste. Initial hop-forward punch of citrus and tropical fruit. Strong, firm bitterness in the 60-100 IBU range that remains clean and lacks harshness. Minimal malt sweetness with a pale, crackery malt character. Dry finish with a long, resinous and fruity aftertaste.
Mouthfeel. Medium-full body with a smooth, velvety texture. Moderate carbonation. Noticeable but well-integrated alcohol warmth. No harsh hop-derived astringency.
