This Imperial Stout presents a decadent sensory journey reminiscent of a liquid dessert. The 11.2% ABV base provides a robust foundation of dark, roasty malts and rich chocolate, significantly enhanced by the addition of Cacao Nibs. Vibrant Raspberry Puree pierces through the darkness, offering a sharp, tart fruitiness that balances the inherent sweetness of the malts. The inclusion of Lactose creates a silky, creamy mouthfeel that mimics the texture of cake frosting, softening the intense roasted bitterness. It is a complex, harmonious blend where the deep cocoa notes and bright berry acids meld into a warming, luscious finish.

Appearance. Jet black and completely opaque (40 SRM). A thick, dark tan head persists with moderate retention, leaving dense lacing. High viscosity is visible as legs on the glass.

Aroma. High intensity. Dominant bittersweet chocolate and earthy cocoa from Cacao Nibs mingle with the bright, jammy aroma of Raspberry Puree. Secondary notes of roasted coffee, burnt grain, and light caramel provide a sturdy base, accompanied by subtle dark fruit esters and a noticeable but clean alcohol warmth.

Taste. Intense initial impression of chocolate-covered berries. Rich cocoa flavors from the nibs complement a roasted malt bitterness. The Raspberry Puree provides a tart, fruity acidity that cuts through the Lactose sweetness, preventing a cloying palate. Medium-high bitterness is present but softened by the residual sugars. The finish is long and velvety with lingering notes of dark fruit and roast.

Mouthfeel. Very full-bodied and chewy with a luscious, velvety texture driven by the addition of Lactose. Carbonation is low to moderate. A smooth, integrated alcohol warmth is present without being sharp or hot.
