This sophisticated Wheat Saison offers a masterful blend of rustic farmhouse character and elegant barrel maturation. The eighteen-month residency in French oak burgundy barrels infuses the base with structural tannins and a delicate vinous complexity that elevates the soft, grainy presence of the wheat. Vineyard peaches provide a lush, succulent stone fruit core that integrates seamlessly with the expressive spicy phenols of the Belgian yeast. Despite the fruit intensity, the beer maintains a classic dry profile, where the effervescent carbonation and a hint of barrel-driven tartness provide a refreshing counterpoint to the rich peach aroma. It concludes with a crisp, peppery finish and a lingering echo of sun-ripened fruit.

Appearance. Pours a hazy, pale orange to deep golden hue (approximately 8-10 SRM) with a massive, rocky white head that exhibits excellent retention and thick Belgian lacing. Highly effervescent with a visible fine bubble stream.

Aroma. High intensity aromatics of fresh vineyard peaches and apricot esters. Complementary notes of cracked black pepper and a subtle earthy spiciness from the yeast are balanced by a soft, bready wheat malt character and a sophisticated vinous, woody quality from the French oak.

Taste. Initial impression is a burst of stone fruit followed by a complex interplay of spicy yeast phenols and light lactic tartness. The wheat provides a soft palate, while the French oak burgundy barrels add dry tannins and a faint vanilla nuance. Finishes very dry with moderate bitterness and a lingering peppery, fruity aftertaste.
