One By One is a modern Hazy IPA that exemplifies the style's signature juicy profile with a soft, inviting texture. The specific hop blend of Citra, Talus, and Simcoe delivers an intense sensory experience, leading with vibrant notes of pink grapefruit, tropical passion fruit, and a unique touch of dried rose petals and sage. Beneath the layers of fruit, a clean, bready malt base provides a supportive platform without adding sweetness. This beer balances the punchy hop aromatics with a smooth, velvety mouthfeel and a restrained bitterness, finishing with a lingering essence of citrus zest and forest pine typical of the hop selection.
Appearance. Pours a hazy, nearly opaque pale gold with a brilliant shine. It is crowned by a medium, rocky, meringue-like white head that exhibits high retention and leaves delicate lacing on the glass.
Aroma. High-intensity aromatics of tropical passion fruit, pink grapefruit, and orange zest from the Citra and Simcoe hops. Unique floral notes of rose and sage from the Talus hops are present, supported by a low, clean, bready malt character and subtle fruity fermentation esters.
Taste. High fruity hop flavor follows the aroma with notes of mango, citrus, and a resinous pine undertone. The malt flavor is low and neutral, providing a soft bready foundation. Bitterness is moderate but perceived as low due to the soft water profile and full body. The finish is off-dry and smooth, avoiding any hop harshness.
Mouthfeel. Medium-full body with a soft, plush, and velvety texture. Carbonation is moderate. There is a very light, well-integrated alcohol warmth from the 6.8% ABV, with no astringency or harshness.
