El Dorado adds a distinct candy-like sweetness and stone fruit character. The malt bill, featuring Golden Promise and Vienna alongside Pale malt, offers a clean, slightly biscuity and honeyed depth that supports the assertive 7% ABV. Fermented with US-05 for a neutral finish, the beer balances high bitterness with a tropical fruit medley, resulting in a complex yet crisp and hop-forward West Coast-style experience.
Appearance. Medium gold in color (8 SRM) with brilliant clarity. Pours with a medium-sized, persistent white head that leaves intricate lacing as it recedes.
Aroma. High intensity hop aroma featuring prominent notes of pine resin, passionfruit, and crushed blueberries. Underlying hints of pineapple and stone fruit emerge. The malt presence is medium-low, providing a clean, slightly grainy and honey-sweet backdrop. Fermentation is very clean with no detectable yeast esters.
Taste. Initial impression is a burst of citrus peel and tropical fruit, followed quickly by a firm, resinous bitterness. The malt profile is supportive, showing notes of toasted cracker and pale grain. Hop flavors of passionfruit, berry, and pine dominate the mid-palate. The finish is crisp and dry with a lingering, clean bitterness and a touch of hop resin in the aftertaste.
Mouthfeel. Medium-bodied with a smooth, slightly oily texture from the hop oils. Carbonation is medium-high, providing a crisp bite. A very light, well-integrated alcohol warmth is present without being harsh.
