This American IPA offers a vibrant sensory experience, blending classic West Coast resin with contemporary Southern Hemisphere brightness. A foundation of Pale and Barke Pilsner malts provides a crisp, crackery canvas for a sophisticated hop profile. Expressive notes of zesty lime from Motueka and crushed gooseberry from Nelson Sauvin lead the charge, while Citra Cryo and Mosaic Cryo add layers of mango, grapefruit, and subtle pine. Fermented with W-34/70 yeast, the profile remains exceptionally clean, allowing the complex fruit and firm, resinous bitterness to stay sharp and focused through a refreshing, decidedly dry finish.
Appearance.Medium gold (6-8 SRM) with brilliant clarity. Features a medium-sized, white, persistent head with excellent lacing.
Aroma.High intensity hops featuring lime zest, white wine grapes, and passionfruit. Secondary notes of grapefruit peel and resinous pine are present. Low, clean, grainy-sweet malt character. Fermentation is very clean with no discernible yeast esters.
Taste.Initial impression is hop-forward with flavors of citrus, gooseberry, and tropical fruit. A low, grainy, crackery maltiness supports the high bitterness. Finishes dry and crisp with a lingering hoppy aftertaste of grapefruit and pine. No harshness or astringency.
Mouthfeel.Medium-light to medium body with a smooth, crisp texture. Moderate-high carbonation. Very light, smooth alcohol warmth is present but well-integrated.
