This Specialty IPA presents a complex interplay between a deep malt base and a vibrant, modern hop profile. Utilizing Pale, Carared, and Special B malts, the beer achieves a dark mahogany hue with layered notes of toasted bread and subtle dark fruit. This foundation supports a high-intensity hop character driven by Simcoe, Citra, El Dorado, and Ahtanum, which deliver a punchy aromatic blend of resinous pine, bright citrus zest, and tropical stone fruit. Fermented clean with US-05 yeast, the beer maintains a hop-forward balance, ensuring that the darker malt elements remain supportive rather than roasty, finishing dry with a firm, lingering bitterness.
Appearance. Dark mahogany to deep brown (30–35 SRM) with excellent clarity and a persistent, light tan head that leaves moderate lacing.
Aroma. High hop intensity featuring notes of grapefruit, melon, and pineapple from Citra and El Dorado, supported by Simcoe's resinous pine. The malt provides moderate aromas of caramel and a light hint of plum or raisin from the Special B, with a very clean fermentation profile.
Taste. Initial impression is hop-forward with tangerine, tropical fruit, and pine resin. A firm bitterness (consistent with 60+ IBU) is balanced by a medium-low malt presence of toasted bread and light toffee. The Special B provides depth without harsh roast or ashiness. Finishes dry and clean with a lingering citrus and resinous aftertaste.
Mouthfeel. Medium body with a smooth, slightly creamy texture. Moderate carbonation. A light, well-integrated alcohol warmth is noticeable but smooth, with no hop-derived astringency.
