Lassard is a refined Specialty IPA that balances a complex malt bill with vibrant New World hops. The aroma is led by the stone fruit and apricot character of Rakau, complemented by the resinous pine of Simcoe and tropical layers from Cryo Idaho 7. This hop profile is layered over a base of Maris Otter and Vienna malts, which provide a biscuit-like and toasty foundation. Specialized grains like Shepherd's Delight and Supernova contribute subtle notes of cocoa and toasted bread without harsh roastiness. The clean US-05 yeast ensures a dry, crisp finish where Cascade's classic grapefruit citrus lingers alongside a firm bitterness.
Appearance. SRM 30. Deep mahogany to dark brown with brilliant clarity. Pours with a dense, persistent tan head that leaves thick lacing on the glass.
Aroma. High intensity. Prominent stone fruit, apricot, and tropical mango aromas are followed by a sharp pine and resinous character. The malt profile offers moderate toasted bread, light cocoa, and a faint nutty sweetness from the Maris Otter.
Taste. Initial hop-forward flavors of grapefruit and pineapple transition into a complex mid-palate of toasted malt, light caramel, and a hint of chocolate. Bitterness is firm and assertive but smooth, typical of the style. The fermentation is clean, leading to a dry and slightly resinous finish with lingering notes of citrus and toasted grain.
Mouthfeel. Medium body with a smooth, velvety texture. Carbonation is moderate, providing a crisp bite that enhances the dry finish. Very light, well-integrated alcohol warmth.
