Flip Flops is a vibrant Wild Specialty Beer that marries complex fruit additions with a creamy, textured mouthfeel. A soft grain bill featuring Pale and Lager Light malts, bolstered by Wheat, Rolled Wheat, and Rolled Oats, provides a pillowy foundation for the specialty additions. Bright, tangy Apricot takes center stage, complemented by the tropical, citrus-forward punch of Citra Cryo. Toasted Coconut and Vanilla lend a dessert-like aromatic depth, smoothed by the lingering sweetness of Lactose. Despite its 7.5% ABV, it maintains a refreshing acidity characteristic of its wild fermentation, resulting in a balanced, sunshine-soaked profile where tropical fruit meets luxurious creaminess.
Appearance. Deep gold to pale orange (7–10 SRM) with a persistent, creamy white head. Notable hazy to opaque clarity due to the heavy use of wheat, oats, and fruit pectins.
Aroma. High intensity with a complex blend of jammy apricot, sweet vanilla, and nutty toasted coconut. Low grainy-sweet malt character from the wheat and oats. A light lactic tartness and subtle tropical citrus from Citra Cryo are evident, balanced by a clean fermentation profile.
Taste. An initial impression of tart apricot and creamy lactose sweetness. The flavor is multifaceted, featuring bready wheat and grainy malts followed by coconut and vanilla. Hop bitterness is low, allowing the fruit acidity and Citra Cryo citrus notes to provide balance. The finish is balanced-sweet with a lingering creamy fruitiness and soft vanilla character.
Mouthfeel. Medium-full body with a significant creaminess from the lactose and rolled oats. Carbonation is moderate. A light, well-integrated alcohol warmth is present at 7.5% ABV, with no perceptible astringency.
