Donkey is a sophisticated American Porter that showcases a deep, layered grist anchored by Maris Otter and Midnight Wheat. The sensory profile is defined by a complex interplay of baker’s chocolate, espresso, and toasted biscuits derived from a blend of Chocolate and Brown malts. Magnum hops provide a clean, structural bitterness that offsets the dark fruit nuances of Crystal Dark malt, while a late addition of Cascade hops introduces a resinous, floral brightness. Fermented with US-05 for a neutral canvas, this medium-bodied ale balances roasted intensity with a crisp finish, delivering a refined yet robust drinking experience.
Appearance. Deep mahogany to nearly opaque black (SRM 35-40) with brilliant ruby highlights at the edges. It supports a dense, long-lasting, creamy tan head with moderate lacing.
