Triolet is a sophisticated Spontaneous Ale inspired by traditional lambic methods, presenting a masterful blend of one-, two-, and three-year-old threads. The profile reveals a complex interplay of soft funk, lemon zest, and aged hops, underpinned by a delicate grainy sweetness from locally-grown unmalted wheat. Oak-driven nuances of vanilla and mild tannin from maturation in wine barrels and large casks complement a mineral-rich foundation from untreated well water. On the palate, vibrant stone fruit and hay notes transition into a bone-dry, crisp finish. This Brett Beer showcases elegant balance, where bright acidity and rustic depth reflect meticulous blending and patient aging.
Appearance. Pale gold to straw (3-5 SRM); white, fine-beaded head with moderate retention and light lacing; slight haze typical of high unmalted wheat content.
Aroma. High intensity; complex Brett character featuring wet hay, barnyard, and aged leather; fruity esters of apricot and lemon zest; subtle earthy and floral notes from aged hops; low grainy malt and a faint woody oak presence.
Taste. Initial impression is tart and exceptionally dry; low bready malt flavor from local barley; negligible hop bitterness with an earthy, herbal aged hop flavor; prominent fermentation character includes tropical fruit, stone fruit, and rustic funk; finishes bone-dry and clean with a lingering mineral quality.
Mouthfeel. Medium-light body with a soft texture from the wheat; high, sprightly carbonation; very low alcohol warmth; slight tannic astringency from oak aging; no cloying sweetness.

Fermented and aged within a variety of oak formats (wine barrels, puncheons and large casks) the various components were blended for complexity and balance.
This beer will always hold a great deal of meaning for us - the first blend of Triolet was our initial offering from Music Vale Compositions, our now extensive collection of 100% spontaneously fermented beers. With each subsequent Triolet bottling we’ve realized growth and refinement but we also find time to pause and reflect, admiring the path we’ve taken thus far. Those first two batches are still drinking wonderfully and we look forward to watching this one develop with grace.'
