Appearance. SRM 3-5 (Pale pink/rose); dense white head with a faint pink tint and poor to moderate retention; slight haze from the raspberry puree addition.
Aroma. High intensity lactic sourness with a dominant fresh raspberry character. Low crackery Pilsner malt presence beneath the fruit. Very low hop aroma with subtle notes of red currants. Clean fermentation profile without funk or acetic notes.
Taste. Clean, sharp lactic sourness dominates the initial impression. Supporting bready and grainy malt flavors from the Pilsner malt provide a thin but necessary backbone. Prominent tart raspberry flavor persists throughout. Hop bitterness is undetectable, while Barbe Rouge hop flavors offer a light berry-like fruitiness. The finish is very dry and crisp with a lingering tart berry aftertaste.
Mouthfeel. Light body with high, effervescent carbonation. No alcohol warmth. Brisk acidity provides a refreshing, clean mouthfeel without significant astringency.
