Whip-Poor-Will is a luminous and refreshing Witbier that honors its Appalachian farm origins with a sophisticated botanical twist. The foundation of unmalted wheat provides a soft, bready cushion for a bright layering of organic oranges and zesty coriander. The defining characteristic is the addition of bergamot-aged Earl Grey tea, which introduces an elegant floral complexity and a subtle tannic structure that complements the traditional citrus profile. Highly effervescent and remarkably crisp, this ale balances a light grainy sweetness with an aromatic, tea-driven finish that is both rustic and refined, capturing the breezy essence of its pasture-born heritage.
Appearance. Pale straw with a luminous, milky-white haze (3 SRM). Features a dense, moussy white head with excellent retention and delicate lacing on the glass.
Aroma. Moderate intensity featuring bready wheat and light honeyed malt. High citrus aromatics of fresh orange zest are bolstered by the perfumy, floral notes of bergamot and Earl Grey tea. Subtle herbal coriander and a hint of peppery yeast esters provide a complex, spicy background.
Taste. Initial impression is crisp and refreshing. Bready, grainy malt flavors lead into a vibrant mid-palate of zesty orange and lemony coriander.
