Brutus is a complex, rustic Saison defined by its connection to the landscape. Brewed with local Barley, Rye, and Wheat, the malt base provides a crisp, grainy foundation for Fonta Flora's mixed house culture. Foraged Dandelion flowers introduce a unique, earthy floral character that weaves through layers of funk provided by Brettanomyces. Brief maturation in wine barrels adds a subtle oak structure and vinous depth. Effervescent and bone dry, the palate delivers a vibrant interplay of tart citrus, peppery spice, and a lingering botanical bitterness, showcasing a masterfully blended, naturally conditioned farmhouse ale with significant rustic charm.

Appearance. Pale straw to light gold (4-6 SRM). Large, billowy white head with excellent persistence and fine lacing. Slight haze from the wheat and rye, though wine barrel maturation provides a semi-bright clarity.

Aroma. Moderate to high intensity. Dominated by Brettanomyces funk—notably wet hay and earthy leather—paired with bright floral notes of dandelion and lemon zest. Low grainy malt from the wheat and rye is present, alongside a delicate vinous touch and peppery yeast phenols.

Taste. Very high attenuation leads to a bone-dry initial impression. Complex layers of spicy rye and bready wheat provide a rustic backdrop for tart green apple and citrus fruitiness. Moderate bitterness is enhanced by the botanical dandelions. The finish is exceptionally clean, featuring a lingering earthy funk and a crisp, peppery aftertaste.

Mouthfeel. Light to medium-light body with high, effervescent carbonation. No perceivable alcohol warmth. Crisp and refreshing with a slight tannic dryness from the wine barrels and dandelion petals.
