Wolf Spit is a sophisticated Baltic Porter that showcases a masterful collaboration between Fonta Flora and Half Acre. The sensory profile is anchored by a rich base of Munich and Vienna-style malts, yielding deep aromas of caramel, toffee, and toasted nuts. The inclusion of shagbark hickory wood introduces a unique rustic complexity, weaving subtle earthy and woody notes into the traditional dark fruit tapestry of raisins and plums. On the palate, a smooth, chocolatey roast balances the initial malty sweetness, while the hickory provides a distinctive, dry, and slightly savory depth. It finishes with a clean, deceptive alcohol warmth and lingering notes of licorice.
Appearance. Opaque dark brown with deep mahogany highlights; features a thick, persistent, and creamy tan head with excellent lacing.
Aroma. High intensity of rich maltiness with layers of deep toast, dark chocolate, and molasses; secondary notes of dried cherries, prunes, and raisins. The shagbark hickory adds a refined woody and slightly nutty aroma that integrates with a clean, warming alcohol presence.
Taste. Initial impression is malty-sweet with flavors of caramel and black currants. A smooth, roasted character emerges mid-palate, reminiscent of dark coffee but devoid of burnt or acrid tones. The shagbark hickory provides a structured, woody earthiness that complements the fruit esters. Finishes dryish with lingering dark fruit and a hint of licorice.
Mouthfeel. Medium-full body with a very smooth, creamy texture. Carbonation is moderate-high, providing a lively, mouth-filling sensation that prevents the beer from feeling heavy. A noticeable, well-integrated alcohol warmth is present.

Mashed with local barley malt along with a delicate blend of caramel, chocolate and roasted malts. Boiled with locally foraged shagbark hickory bark. Fermented cool and conditioned cold with our preferred house lager yeast. Lagered for six weeks for a smooth, chocolate and pronounced maple earth profile.
Expect a beautifully nuanced and textured chocolate and coffee profile along with rich and complex notes of the barren yet beautiful winter forest.
An ongoing collaboration with our dear friends at @halfacrebeer, these incredible folks represent the very first collaboration ever brewed at our Whippoorwill Farm production facility. With a brewery and building in complete disarray, we welcomed our Windy City friends with a team building yoga sesh, pour over coffee on a pallet table and a hike up Shortoff Mountain.
What has become one of our very favorite winter releases, now more than ever, we are incredibly grateful for past experiences and how they have shaped who we have become as a brewery.
Best consumed on the tippy top of Shortoff Mountain, on the windiest day possible.
