This Appalachian Wild Ale presents a sophisticated harmony between rustic fermentation and vibrant local fruit. The addition of fresh nectarines and plums contributes a succulent stone fruit profile, layering notes of juicy flesh and tart skin over a bone-dry foundation. Driven by Brettanomyces, the sensory landscape evolves from bright, floral esters into a nuanced funk characterized by sun-dried hay and soft earthy tones. At 6.4% ABV, the beer remains exceptionally light and effervescent, showcasing a highly attenuated body that highlights the regional terroir and the crisp, acidic snap of the fruit.
Appearance.Deep gold to soft copper (6–10 SRM) with a slight to moderate haze. Features a moderate, frothy white head with fair retention and light lacing.
Aroma.High intensity with dominant notes of ripe nectarine and dark plum skins. A distinct wild character emerges as wet hay, soft leather, and a dusty minerality, supported by a subtle toasted cracker malt background.
Taste.Initial burst of tart nectarine and sweet plum flesh followed by a bone-dry mid-palate. Hop bitterness is very low, allowing the fruit's natural acidity and rustic funk to lead. Fermentation character is complex, offering earthy notes and a clean, lingering tart fruit-skin finish.
Mouthfeel.Light to medium-light body with a crisp, effervescent mouthfeel due to high carbonation. Very low astringency and a subtle, well-integrated alcohol warmth.
