Bubble Foot is an assertive Super Saison that marries rustic tradition with wild complexity. Conditioning with Brettanomyces introduces a distinctive layer of barnyard funk, leather, and overripe pineapple, which intermingles with the spicy, peppery phenolics of the base yeast. The unique process of boiling with granite rocks imparts a subtle, flinty mineral depth and a faint scorched-sugar caramelization. Expect a palate-clearing dryness driven by high attenuation, while the elevated strength provides a gentle warmth. This collaboration showcases a vibrant interplay of earthy minerals, rustic grains, and a sophisticated, funky fruitiness that lingers long into the finish.
Appearance. Deep gold to pale orange (7-9 SRM). Features a dense, rocky, ivory head with excellent retention and persistent lacing. Unfiltered with a soft, characteristic haze and high effervescence.
Aroma. High intensity with a complex blend of spicy black pepper and fruity esters resembling lemon zest and apricot. Brettanomyces adds a noticeable farmhouse funk, including notes of wet hay and leather. A subtle mineral, flinty quality is present, alongside a faint, grainy malt backbone.
Taste. Initial impression of bright pear and citrus, transitioning into sharp, peppery spice and moderate bitterness. Brettanomyces contributes an earthy complexity and a very slight tartness. The malt provides a soft, grainy palate that remains secondary to the fermentation character. Finishes exceptionally dry with a lingering spicy aftertaste.
Mouthfeel. Medium body with very high, effervescent carbonation. A soft, pleasant alcohol warmth is present due to the higher gravity. Highly attenuated with a crisp, refreshing mouthfeel and no astringency.
