This expressive Double IPA delivers a sensory explosion of tropical fruit, powered by a heavy-handed blend of Idaho 7 and Mosaic. The aroma is saturated with ripe mango and pineapple, further brightened by the citrus zest and grapefruit notes of Citra. A sturdy base of Golden Promise, pilsner malt, and wheat provides a soft, bready graininess that supports the high hop intensity. Fermented with London Fog yeast, the beer offers nuanced stone fruit esters that meld with the hops, leading to a velvety mouthfeel from the oats and a smooth, moderately bitter finish that highlights its depth.
Appearance. Pale gold to light orange (6-8 SRM) with a persistent, dense white head. The beer exhibits significant opacity and a soft haze due to the high protein content from wheat and oats, along with the specific yeast strain used.
Aroma. Intense hop aroma characterized by a blend of tropical fruit, berry, and citrus. Idaho 7 and Mosaic contribute dominant notes of mango, papaya, and pine, while Citra adds bright grapefruit. A light, sweet, bready malt presence from Golden Promise and subtle stone fruit esters from London Fog yeast round out the profile.
Taste. High hop flavor featuring pineapple, melon, and citrus oils. A clean and supportive malt backbone provides flavors of bread and soft grain. Bitterness is moderately high but smooth, avoiding harshness. The finish is medium-dry with a lingering impression of tropical fruit and a clean alcohol presence.
Mouthfeel. Medium-full body with a creamy, velvety texture derived from the oats and wheat. Carbonation is moderate. A light, well-integrated alcohol warmth is noticeable but smooth, contributing to a substantial and satisfying mouthfeel without astringency.
