New Territory is a vibrant American IPA that bridges old-school resin with modern tropical flair. A sturdy foundation of Pilsner and Pearl Pale Ale malts provides a light, crackery backdrop, allowing the hop profile to dominate. Initial sensory notes are driven by Centennial and Chinook, delivering a classic piney bitterness and herbal depth. The addition of Simcoe in the whirlpool introduces layers of citrus zest and a subtle, earthy dankness. A generous dry hop of Citra, Simcoe, and Chinook elevates the profile with bright grapefruit and ripe mango aromas. The experience concludes with a crisp, dry finish and a lingering, clean hop bite.
Appearance. Medium gold (7 SRM) with a slight, unfiltered haze. Topped by a medium-sized, persistent white head with excellent lacing.
Aroma. High intensity hop aroma featuring prominent resinous pine, grapefruit, and ripe mango. Background notes of citrus zest and a touch of dankness are supported by a low, clean, grainy-sweet malt character. Fermentation profile is neutral.
Taste. Firm hop bitterness is immediate, featuring flavors of resinous pine and spicy wood. Mid-palate reveals layers of bright grapefruit and tropical fruit. The malt flavor is low and crackery, providing a clean canvas for the hops. The finish is decidedly dry and crisp with a lingering, hoppy aftertaste.
Mouthfeel. Medium-light body with a snappy, smooth texture. Carbonation is moderate-high. Features a light, well-integrated alcohol warmth without any harshness or astringency.
