Pavement presents as a contemporary Double IPA, delivering an assertive and intensely aromatic sensory experience. The profile is defined by a saturated hop character, prominently featuring succulent mango and sharp passion fruit, backed by a bright, zesty citrus finish. While the bitterness is firm and purposeful, it remains clean and integrated, avoiding harshness. A lean, neutral malt base provides just enough structural support without introducing distracting caramel sweetness, allowing the tropical and stone fruit esters to shine. This is a powerful, high-impact ale that balances its significant strength with a surprisingly dry and refreshing finish.
Appearance. Pale gold to light orange (SRM 7-8). Dense, off-white, persistent head with excellent lacing. Slight haze is present, which is acceptable for the style.
Aroma. High intensity hop aroma with dominant notes of ripe mango and tart passion fruit. Secondary citrus layers of grapefruit and lime zest. Background malt is very low and neutral, providing a grainy, cracker-like foundation. Clean fermentation profile with a subtle, smooth alcohol presence.
Taste. Initial impression is an explosion of tropical fruit, mirroring the aroma with heavy mango and passion fruit flavors. Bitterness is high but not harsh, providing a firm balance to the 8.2% strength. Low malt character is clean and soft. The finish is dry to medium-dry with a lingering citrus and resinous hop aftertaste.
Mouthfeel. Medium body with a smooth, slightly creamy texture. Carbonation is medium-high. A noticeable but well-integrated alcohol warmth is present, devoid of any solventy or hot characteristics.
