Flying Monkeys Invictus Bourbon Barrel Aged
This formidable Imperial Stout is a masterclass in complexity, defined by its intensive solera aging in Buffalo Trace, Jim Beam, and Heaven Hill barrels. Poured an opaque ebony, it releases a high-intensity bouquet of amaretto and raisins. The foundation of Munich Malt and Pale Malt provides a sturdy breadiness, while Chocolate Malt and Roasted Barley contribute deep cocoa and espresso notes. CTZ and Hallertauer hops offer a subtle structure against the massive 18.4% ABV. The palate is treated to luxurious turbinado sweetness and dark fruit, finishing with a smooth, cognac-like warmth that lingers elegantly, reflecting years of patient barrel maturation.
Appearance. Opaque ebony (SRM 50). Pours with a dense, deep tan head that settles quickly into a fine ring, leaving thick, oily legs on the glass due to the high viscosity and alcohol content.
Aroma. High intensity. Intricate layers of dark fruit, specifically raisins and dried plums, mingle with rich amaretto and vanilla from bourbon barrel exposure. Deeply roasted aromas of bittersweet chocolate and espresso arise from the roasted grain. A distinct boozy, spirit-like character is present but smooth, complemented by a hint of molasses.
Taste. Massive and complex. Initial turbinado sugar sweetness transitions into rich flavors of dark fruit and toasted Munich Malt. The mid-palate reveals charred oak, vanilla, and a distinct bourbon character. Hop bitterness is low for the style, providing just enough balance to the heavy malt weight. Finishes exceptionally long and smooth with a warming, spirituous glow and lingering notes of dark chocolate.
Mouthfeel. Extremely full-bodied, viscous, and chewy. The addition of flaked oats creates a velvety, tongue-coating texture. Carbonation is low, enhancing the luxurious, liqueur-like mouthfeel. Significant but well-integrated alcohol warmth is prominent and soul-warming.

Our 2016 vintage is a slightly higher ABV than previous years due to the beauteous inexactitudes of bourbon barrel aging and time. Pours opaque ebony with voluptuous aromas of raisins, amaretto, and roasty bourbon. The silky, viscous mouthfeel coats the palate with a turbinado sweetness, dark fruit, and a smooth, belly-warming, spirited finish. Aged over one year in Buffalo Trace, Heaven Hill, and Jim Beam bourbon barrels.
