Flying Dog’s Cream Team is a decadent Imperial Stout that artfully mimics the nostalgic indulgence of cookies dunked in cold milk. This 9.5% ABV powerhouse presents a rich sensory tapestry of bittersweet chocolate and deep roasted malts, seamlessly layered with creamy lactose and vanilla-forward cookie dough notes. The experience captures that final, saturated gulp of milk, blending heavy cocoa profiles with a velvety, dessert-like sweetness. While the dark malt provides a firm, roasty backbone, the infusion of lactose creates a lush, rounded profile that masks the significant alcohol strength, resulting in a harmonious balance between a bold stout and a liquid confection.
Appearance. Jet black and completely opaque (40 SRM). Pours with a thick, dense, deep tan head that shows moderate retention and leaves significant lacing. The high viscosity is apparent in the glass, forming clear legs when swirled.
Aroma. High intensity aroma dominated by dark chocolate, cocoa powder, and roasted coffee. Strong secondary notes of sweet vanilla and creamy lactose evoke chocolate sandwich cookies. Subtle dark fruit esters of prune and raisin emerge as it warms, alongside a clean, soft alcohol presence.
Taste. Initial impression is intensely sweet and creamy, followed by a wave of bittersweet chocolate and toasted grain. The mid-palate features a distinct vanilla-cream character typical of a milk stout. Bitterness is moderate, providing enough structure to prevent a cloying finish, though the balance remains decidedly sweet. The aftertaste lingers with notes of cocoa and a gentle alcoholic warmth.
Mouthfeel. Full-bodied and exceptionally creamy with a velvety, chewy texture. Carbonation is low to moderate, enhancing the luscious weight of the beer. Significant alcohol warmth is present but smooth and well-integrated.
