PELICANO is a decadent Imperial Stout that presents a luxurious sensory profile defined by its pastry-inspired adjuncts. The aroma is dominated by rich, bittersweet chocolate and intense, toasted coconut, underpinned by notes of dark dried fruit like raisins and plums. On the palate, bold vanilla and creamy lactose provide a velvety sweetness that coats the tongue, while deep layers of roasted malt offer a soft, balancing bitterness to prevent the finish from becoming cloying. The 9% alcohol is well-integrated, providing a gentle warmth that enhances the complex interplay of chocolate and tropical coconut, resulting in a harmonious, indulgent, and chewy experience.

Appearance. Jet black and opaque (SRM 40). It pours with a thick, persistent deep tan to mocha-colored head that leaves moderate lacing. High viscosity is apparent when swirled, showing slight legs on the glass.

Aroma. High intensity. The primary bouquet features heavy bittersweet chocolate and cocoa, followed by distinct notes of toasted coconut and sweet vanilla bean. Low to moderate esters of dried plums and prunes are present. A background of roasted malt and a hint of creamy lactose sweetness rounds out the nose without any harsh alcohol character.

Taste. Rich initial impression of dark chocolate and sweet cream. Bold flavors of coconut and vanilla take center stage, supported by a sturdy malt backbone of bread and toast. Low to moderate bitterness from roasted grains provides a necessary counterpoint to the lactose-driven sweetness. The finish is long and bittersweet, lingering with notes of dark fruit and cocoa.

Mouthfeel. Full to very full-bodied with a chewy, luscious, and velvety texture enhanced by the addition of lactose. Carbonation is low to moderate, ensuring a smooth delivery. A gentle, pleasant alcohol warmth is present and noticeable but remains well-integrated and non-solventy.
