Floem DAAM
Floem DAAM presents as a modern, vibrant Double IPA, leaning into the hazy and juicy profile requested by the brewer. The aromatic profile is dominated by the interplay of Citra and Mosaic hops, delivering high-intensity notes of tropical mango, ripe blueberry, and zesty grapefruit. Centennial and Ekuanot add layers of pine resin and subtle herbal lime. Fermented with Vermont yeast, the beer exhibits soft peach and apricot esters that bolster the fruit-forward character. This pale orange ale is characterized by a creamy, medium-full body and a restrained but firm bitterness that ensures a clean, drinkable finish despite its 8% strength.
Appearance. Hazy, deep gold to light orange (6–8 SRM). Large, persistent, pillowy white head with dense lacing. Significant haze as per the hazy and juicy brewer intent.
Aroma. High intensity. Prominent tropical fruit (mango, passion fruit) and citrus (grapefruit) from Citra and Mosaic. Secondary notes of pine and floral blossoms from Centennial. Estery fermentation profile of stone fruit (peach) from Vermont yeast over a neutral, grainy malt background.
Taste. Immediate burst of tropical fruit and citrus oils. Mosaic contributes berry-like complexity, while Ekuanot adds a hint of lime and pithy fruit. Supported by a low, soft, bready malt character. Bitterness is firm and moderately high but lacks harshness, leading to a medium-dry finish with a lingering juicy hop aftertaste.
Mouthfeel. Medium-full body with a soft, creamy texture. Moderate carbonation. Smooth, noticeable alcohol warmth consistent with 8% ABV. Devoid of hop-derived astringency.
