This Wild Specialty Beer presents a striking sensory profile defined by its assertive grapefruit character and clean lactic acidity. Brewed with grapefruit puree, it leads with intense aromas of fresh citrus zest and pithy grapefruit, backed by a subtle, cracker-like malt base. The fermentation provides a sharp, lemony sourness that brightens the fruit profile. On the palate, a notable bitterness—distinctive and echoing the natural astringency of grapefruit skin—balances the dry finish. This refreshing, complex ale showcases a harmonious blend of wild fermentation traits and vibrant fruit, finishing crisp with a lingering citrus tang and a bone-dry mouthfeel.

Appearance. SRM 3-5; pale straw to light gold with a slight hazy luminescence from the fruit puree. The white head is moderate in height with fair retention, though the lactic acidity may cause it to dissipate more quickly than a standard ale, leaving light lacing.

Aroma. High intensity aromatics of fresh-squeezed grapefruit and citrus zest. A clean, sharp lactic sourness provides a lemony backdrop. Malt character is very low, presenting as neutral crackery notes. No significant hop aroma is present, allowing the fruit and fermentation acids to dominate.

Taste. Initial impression is sharply tart and bracingly dry. The flavor is dominated by authentic grapefruit, including both the juice and a pithy bitterness. Lactic acidity is moderate-high, enhancing the fruit's brightness. Malt flavor is minimal and neutral. The finish is very dry and crisp with a lingering, pleasant citrus-pith bitterness that provides more structure than a typical sour beer.

Mouthfeel. Medium-light body with high carbonation that produces a prickly, effervescent sensation. There is a slight pithy astringency from the grapefruit skin that enhances the perception of dryness. Alcohol warmth is negligible, and the mouthfeel is clean without any residual syrupiness.
