Tilda is a sophisticated hybrid that bridges the gap between a robust Lithuanian farmhouse ale and the elegant character of 2017 Riesling. The 10% ABV provides a significant backbone to the intense aromatics of honeysuckle, ripe peach, and lime zest characteristic of the grape varietal. These white wine notes meld seamlessly with the rustic, spicy phenols and earthy esters of the Lithuanian farmhouse yeast. Despite its strength, the beer maintains a crisp, effervescent structure with an exceedingly dry finish. It presents a complex sensory journey from floral stone fruit to a lingering, spicy warmth, embodying a refined Grape Ale.
Appearance. Pale golden (5 SRM). Effervescent with a fine-beaded, white head that shows moderate-low retention due to high alcohol levels. Brilliant clarity.
Aroma. High intensity. Dominant floral Riesling aromatics of jasmine and honeyed stone fruit, specifically peach and apricot. Underlying spicy, peppery phenols and subtle earthy notes from the farmhouse fermentation. Low pilsner malt sweetness with no detectable hop aroma.
Taste. Initial impression of tart white wine and bright acidity. Rich stone fruit flavors of apricot and lime are supported by a rustic, spicy yeast character. Malt is light and supportive rather than robust. Bitterness is very low. Finish is exceedingly dry, clean, and crisp with lingering vinous notes and a touch of honey.
Mouthfeel. Medium body with high carbonation providing a sparkling, champagne-like prickle on the tongue. Noticeable alcohol warmth that is well-integrated but significant. Very low astringency.
