Fermented with Blaugies yeast and Brettanomyces, it opens with an intriguing tapestry of farmhouse funk, peppery phenols, and dark fruit elegance from Merlot and Cabernet Sauvignon grapes. Pale Pilsner malt and tangy Sauermalz form a crisp, slightly acidic base, while Special X malt imparts subtle undertones of dark caramel and dried fruit. A light, earthy touch from Columbus hops balances the rich grape sweetness, resulting in a sophisticated, dry, and warming profile that bridges the gap between Belgian wild ale and fine red wine.

Appearance. Deep reddish-ruby color with a slight haze from the wild fermentation. It supports a delicate, light pinkish-white head with medium-low retention and patchy lacing.
