Olov is a characterful American Pale Ale that masterfully blends rustic heritage grains with bright, modern hopping. Built on a foundation of local Chevallier malt, the beer gains a distinct bready depth, further enriched by the inclusion of wheat and rye for a subtle peppery texture. The aromatic profile is defined by a vibrant dry-hop addition of Cascade and Simcoe, delivering a punchy bouquet of grapefruit, resinous pine, and tropical fruit. Fermented with a fruit-forward farmhouse yeast, it displays expressive esters that complement the hop-derived citrus, finishing with a balanced, clean bitterness and a crisp, refreshing mouthfeel.
Appearance. Pours a deep gold to light amber with a slight haze from the rye and wheat proteins. Topped by a moderately large, persistent off-white head with excellent lacing.
Aroma. Moderate to high intensity featuring classic American hop notes of grapefruit and floral citrus from Cascade, paired with the earthy pine and passionfruit of Simcoe. Supported by a grainy, bready malt presence and noticeable fruity esters from the farmhouse yeast.
Taste. Initial citrus and pine hop flavors are prominent, quickly joined by a rustic, bready malt backbone from the Chevallier grain. The rye adds a faint spicy complexity. Bitterness is moderate and firm, balancing a faint honey-like sweetness. The finish is medium-dry with lingering notes of grapefruit peel and resin.
Mouthfeel. Medium body with a slight silkiness from the wheat and rye. Carbonation is moderate to high, providing a lively prickle on the tongue. Smooth finish with no alcohol warmth or astringency.
