A vivid hybrid that bridges the gap between a Berliner Weisse-style sour and Daniel Mattern Rosé wine. This complex ale is fermented with a Belgian Saison yeast and aged on fresh raspberry puree, resulting in an aromatic profile that is both rustic and refined. The sensory experience is dominated by the bright, tart character of raspberries and vinous grape notes, balanced by the peppery, earthy esters of the Saisonhefe. The fermentation creates a bone-dry, refreshing structure where sharp lactic acidity amplifies the fruit's natural zest, delivering an elegant, effervescent finish reminiscent of a sparkling rosé with a wild, farmhouse edge.

Appearance. Brilliant deep pink to soft ruby hue with a slight haze from the raspberry puree. Pours with a moderate, pink-tinted head that shows moderate to low retention, eventually settling into a fine-beaded collar.

Aroma. High intensity of fresh, jammy raspberries and floral Rosé wine. The Belgian Saison yeast provides subtle notes of cracked black pepper and dried hay. A clean, lemony lactic sourness underpins the fruit, with a faint doughy malt presence in the background.

Taste. Initial impression is sharply acidic and refreshing, led by intense tart raspberry and red currant flavors. The mid-palate reveals the vinous structure of the Rosé wine, adding complexity through faint grape skin tannins. Hop bitterness is virtually absent, overwhelmed by the high lactic acidity. The finish is exceptionally dry and crisp, with a lingering tart berry and spicy yeast aftertaste.

Mouthfeel. Medium-light body with a lean, crisp texture. High carbonation provides a lively, spritzy mouthfeel that enhances the perceived acidity. A subtle alcohol warmth is present but well-integrated, accompanied by a very light, pleasant astringency from the fruit skins.
