It showcases the vibrant integration of local Vordertaunus sour cherries with a complex fermentation profile driven by Flemish yeast and Brettanomyces. The sensory experience is dominated by a sharp, lactic acidity that pierces through layers of dark malt, offering notes of toasted crust and caramel. The cherries contribute a bright, tart fruitiness and a deep ruby hue, while the wild yeast adds layers of leather and earthy funk. At 7.5% ABV, it carries a graceful warmth that complements the balsamic-like complexity and dry, lingering finish.

Appearance. Deep mahogany to reddish-brown (SRM 25-30) with distinct ruby highlights from the fruit. The head is moderate in height, off-white to light tan with a faint pinkish tint, showing fair to poor retention typical of acidic styles.

Aroma. High intensity aromatics featuring sharp sour cherry and red berry notes. The malt backbone provides a rich layer of caramel, toffee, and toasted bread. A complex wild character is evident, showcasing leather, horse blanket, and earthy funk from Brettanomyces, balanced by fruity esters of plum and a light balsamic acidity.

Taste. Initial impression is sharply acidic and fruity. Tart sour cherry flavors dominate the mid-palate, supported by a malt profile of caramel, dried dark fruits, and a hint of chocolate. Very low hop bitterness, as the balance is driven by lactic sourness. The finish is exceptionally dry and acidic with lingering notes of cherry skin, barnyard funk, and a touch of oak-like tannin.

Mouthfeel. Medium body, though the high carbonation and assertive acidity provide a lighter, more refreshing perceived weight. A noticeable but smooth alcohol warmth is present. Light astringency from the fruit skins enhances the dry finish.
