Nec Bones Batch #2 is a masterful expression of stone fruit and wild fermentation, centering on the vibrant essence of locally grown Honey Fire Nectarines. This Brett Beer pours with a soft, hazy glow, releasing a perfume of ripe, sun-drenched fruit intertwined with the rustic, earthy funk of a mature Brettanomyces culture. Aged in French Oak foeders, the palate reveals layers of juicy nectarine and subtle floral honey, balanced by the dry, tannic structure of the wood and a crisp, effervescent finish. The extended aging of the base beer contributes a sophisticated depth, blending vibrant acidity with a delicate leathery complexity.
Appearance. Golden to light orange in color (SRM 6–8) with a persistent, moderate haze from the heavy nectarine puree. Pours with a thin, off-white head that shows moderate retention and leaves light lacing on the glass.
Aroma. High aromatic intensity featuring dominant notes of ripe Honey Fire Nectarines and stone fruit esters. A sophisticated funk follows, characterized by wet hay, leather, and mild earthiness from the Brettanomyces, layered over subtle vanilla and toasted French Oak.
Taste. Initial impression is a burst of juicy nectarine flesh and skins, followed by a crisp, non-lactic tartness. The malt character is low, providing a neutral stage for complex Brettanomyces flavors of dried hay and cellar-like funk. The finish is very dry and woody, with lingering fruit notes and a faint oak-derived spice.
Mouthfeel. Medium-light body with high carbonation that provides a lively, refreshing prickle. Low to moderate alcohol warmth is present but well-integrated. A slight tannic astringency from the French Oak and fruit skins adds structure and contributes to the dry finish.
