Firestone Walker’s Ferus Fruitaneous is a vibrant take on a Gueuze, masterfully blending traditional Belgian spontaneous fermentation with a lush West Coast bounty. Infused with freshly harvested Ventura-grown raspberries and equal amounts of Mexican Guava, the sensory experience opens with an inviting floral and candy-like bouquet. These fruit additions integrate seamlessly with the classic barnyard funk and earthy leather notes of the base. On the palate, a bright, spicy character emerges alongside sharp acidity, leading to a crisp, bone-dry, and spritzy finish. The interaction between the tart berry and tropical guava creates a complex, refreshing profile that honors old-world Lambic techniques while embracing a modern fruited flair.
Appearance. A vibrant rose-gold to soft red hue (approx. 7–10 SRM); displays a thick, rocky, mousse-like light pink head with excellent retention and delicate lacing. Effervescent carbonation is visible through a slight haze from the fruit additions.
Aroma. High intensity; moderately sour with complex funkiness suggesting hay, horse blanket, and a touch of leather. Layered with high fruit aromas of fresh raspberry and tropical Mexican Guava, lending a floral and candy-like sweetness. Supportive bready wheat notes and a hint of spice.
Taste. Sour and funky on the palate with an initial burst of tart raspberry and sweet guava nectar. Malt flavor is low and grainy, quickly overtaken by sharp acidity. No hop flavor or bitterness; balance is driven entirely by acidity. The finish is exceptionally crisp, bone-dry, and spritzy, leaving a lingering tart fruit and wild funk aftertaste.
