This 7% ABV wild ale showcases a harmonious marriage of Macintosh apple and apricot, delivering a lush stone fruit profile uplifted by the dry, sparkling finish characteristic of Brettanomyces fermentation. Aging on a bespoke granola blend introduces nuanced layers of toasted almonds and earthy oats, while whispers of cinnamon and vanilla provide a warm, dessert-like aromatic lift. The result is a highly attenuated, effervescent pour that balances tart fruit acidity with a delicate, nutty depth and a hint of wild funk.
Appearance. Golden-orange to deep amber (8–12 SRM); hazy to opaque due to fruit puree and oat additions. Features a moderate white head with fair retention and light lacing.
Aroma. High intensity aromatics of ripe apricot and crisp Macintosh apple. Layers of sweet cinnamon and creamy vanilla follow, supported by a toasted almond nuttiness. Brettanomyces contributions offer stone fruit esters and a subtle, earthy farmhouse funk without lactic sourness.
Taste. Initial impression is a burst of tart apricot and zesty cranberry. The mid-palate reveals bready oats and a distinct almond character. Very dry finish driven by high attenuation, leaving lingering notes of cinnamon, vanilla, and a light, leathery Brett funk. Bitterness is low, allowing fruit acidity and spice to lead the balance.
